Anybody ever attempt to make gumbo? Seems like it takes some skill to make it right.

I like to add a can of rolled anchovies or a squeeze of shrimp paste early so that they cook out to nothing but flavor. It adds that deep seafood flavor and saltiness that is hard get without a seafood stock to begin with.

I made some with sausage and shrimp. Found a few recipes and winged the rest.
Turned out awesome!!!

Though it would likely cause a fist fight in Coonarse land, you can buy roux in glass jars at the grocery store and save yourself a lot of time.

Real gumbo doesn't have okra and tomatoes. That's something that was added by the yankees when they were trying to figure out how to make it.

I've used it a couple of times and some of it is really good. I wish HEB carried it. There's a little store in Austin on 183 called Sambets that carries several varieties of it. It's drop dead good.

I love to make Gumbo, little Chicken Sauage and Shrimp, can't go wrong with that kind of eatin. You burn the roux just start over. I'ts going to suck, no matter what you try to do to it.

I know some people don't consider Baton Rouge to be true Cajun country, but it's far enough south in Louisiana for me to consider them as being in the know. That's where my Dad's family has lived for many generations and they all put okra in their gumbo. So, I would tend to disagree with your statement. If you would have said corn and tomatoes, I'd high five you.

my family up around Ruston always put okra in it. i hate it. I guess they did it because they grew it like crazy on the farm and needed to add it to something. i've only had it once with tomato and was confused if i was eating creole or sauce piquant and then they told me it was gumbo!

My relatives on Dad's side all came from Lafayette and they never put okra in it. I guess it comes down to whether you want gumbo or vegetable soup with some roux in it. LOL
