Kat's Ham Pot Pie
About 3 large potatoes, peeled and cubed, tossed in a pot of boiling water until just done. Not mushy.
While that's going, saute up about half an onion minced fairly fine in a little butter. When they're just going clear, toss in about a pound (give or take a bit) of cubed ham. When that is just starting to get some color, set to the side.
In a large pot, get about 1/2 to 2/3 c. of heavy cream reducing. When it changes color from cream to slightly buttery (reduce by about half? maybe 1/3rd?) toss in about 3" of cubed velveeta. Stir until its mostly melted and toss in more cheese... cheddar and parmesan is usually what I go for. About a handful (half a cup?) of shredded cheddar, and 1/3rd a cup of parmesan. Stir until melted and set to the side.
In a large baking dish, spread out your potatoes on bottom, then ham and onions, then some steamed frozen broccoli. Pour the cheese sauce on top, fit a pie crust or a puff pastry sheet over the top, brush with a beaten egg and bake at 425 just until golden brown.

My mom does something very similar but uses less cheese, and makes the top out of bisquick so it is like a large biscut covering the top.
It's fantastic

Why do you brush the pie crust with a beaten egg? I've never heard of that. Does it help the taste of the crust at all or is it just for "presentation" (makes the crust a little darker?). Never tried it but now I will.

Helps it darken evenly and get a nice golden quicker.
Everything in the pie is already cooked. You're just cooking the crust and browning it up quick.
