I had a client tell me this a couple days ago.
Dip it in melted Blue Bell Vinella Bean ice cream, then roll it on the batter. He said the kids ate more fish that night than ever.... And so did the adults. I have not tried it yet, but might. Sounds great, I just dont eat much fish anymore.

Here is how i do it and i love it. I cut the fillets into good dipping size pieces. I get a Freezer bag and add about a cup of flour and about 3 cups of yellow cornmeal then add Salt and Pepper. I then put the fish in the bag and shake well until coated and the Fry it up! Please share your recipes if you don't mind. I also have an Excellent Tarter sauce recipe if any of you would like it. Just let me know and i will post it here. I just salt and pepper my fliets, roll in cornmeal and drop in the fryer! For Tarter Sauce we use Light Mayo, Dill Relish and sprinkle with Paprika. Louisiana Fish Fry and plenty of (HOT) "Slap Ya Mama" ! Target in Mansfield has the (yellow) mild Slap Yo Mama, but we prefer the (hot), red container. I can't find any around here so when we go to the in-laws in Bossier I usually get 4 or 5. The mild seems to be more "salty" to us.

I have a pretty good batter consisting of masa flower, yellow corn meal, red pepper, black pepper and salt to taste.I have used this for sand bass and had a lot of compliments, but when I used it for crappie I had people say it was the best fish they had ever eaten. If any one would like the recipe I would be glad to send to you. God bless America.

I use a 1/2 and 1/2 mixture of Andy's (cant find in most stores. Some HEB's down south have it) and Panko Japanese bread crumbs. It'll make you the crispiest fish fry you've ever had. My brother turned me on to this and I'll never do it any other way again. Of course, you can kick up the temp on it with a little Chachere's or whatever your favorite spice is.
