I actually like to use those 'shrimp hooks'. They are very easy to hook up to the shrimp and it doesn't even get stuck with the hook. Works great under a rattle bobber or popping cork.

Not hardly anyone uses trebles on live shrimp due to swallowing and jacking with getting stuck had to get a bad reminder the other day changing hooks on one of my lures SOB forgot how bad they hurt.

I use a 1/0 to 3/0 Octopus hook for this even though I prefer live mullet for bait.

The long shaft on this hook also give a fish more area to pry itself off that hook.
That's why trophy trout pro's like a 2/0 hook.
