Have cooked hushpuppies many ways over the years, and most of the time they were very good. Last week, I tried a new way that I liked a lot.

1 cup of self-rising corn meal mix.
1/4-1/3 cup of boiled small zucchini squash with skin and seeds mashed up into a mush.

Two tbs. of chopped pickled jalapeno peppers. Onions would also be good, but I didn't use them this time.

Mix all this together with buttermilk until it forms a rather stiff batter that can be dropped from a spoon with effort. Doesn't take much buttermilk. You don't want it too runny or you will have problems.

Fry in 300-325 degree oil until they float.

Note that there is no egg in this. My experience is that egg causes them to brown too fast without getting done in the middle. Also, the lower frying temperature keeps them from getting done too soon.
