Ingredients ;
I use roasted hatch chiles instead of can chiles. Just cut them take the seeds out and lay them flat.
1 pound lean ground beef
1 onion, chopped
2 (4 ounce) cans whole green chile peppers, drained
1 1/2 cups shredded Cheddar cheese, divided
4 eggs
1/4 cup all-purpose flour
1 1/2 cups milk
salt and pepper to taste
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large skillet over medium high heat, combine the ground beef and onions and saute for 5 to 10 minutes, or until browned; drain excess fat.
3. Arrange 1 can of the chile peppers on the bottom of a 7x11 inch baking dish. Sprinkle with half the cheese and top with the meat mixture. Sprinkle the meat mixture with the remaining cheese, followed by the next can of chile peppers.
4. In a medium bowl, combine the eggs, flour and milk, whisking until smooth. Pour this into the baking dish over the chile peppers. Season with salt and pepper to taste.
5. Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes. Let cool for about 5 minutes before cutting.

YES!! ABSOLUTELY LOOKS GOOD! Like you, I recommend anyone use fresh Poblano peppers for this NOT canned chilis. Canned chilis will totally destroy this. Thanks for the recipe.

Made it for lunch today and all I did different was use queso blanca quesadilla cheese instead of cheddar on the inside. I topped it with extra sharp cheddar. Wife and kids loved it. I thought it was damn good too. I used some Hatch green chiles we got at Central Market a few weeks back. Great recipe. Thanks

I used ground axis deer meat with some large grilled and peeled poblano peppers, stuffed with queso blanco. This recipe is muy bueno and ranks in my top ten turd master dishes

We are currently hiding from the heat in the New Mexico mountains. Tried this recipe today, it was OUTSTANDING! We did used fresh roasted Hatch chiles. Thanks for the recipe!

Had everything but ground beef on hand, so I seared some sirloins with mexican spices then threw them in the crock pot until I could shred them up and used that for the meat. Really good recipe. Will definitely try it again with ground beef too!
