Now at central market ..Freds north doing their roast tmrw ..I plan to buy a bunch , makes great salsa , but good on everything ..how do you like to use hatch chilies ?

So many ways, such chili goodness! Cook 'em in eggs, roast and freeze most of them. While they're fresh I'll roast one on the grill next to a steak. Use the roasted and frozen as long as they last, usually run out in Dec. / Jan. due to a lack of freezer space. Just about a perfect pepper..

Amen I could go for awhile on how I use those peppers word of caution one year I thought I would roast my own spent the afternoon roasting em on my weber the next day my hands and face were on fire from all the oil from the peppers from now on central mrkt does my roasting

Sliced in rings, pickled in 1/2 vingegar 1/2 water, clove of sliced garlic and TBL of pickling salt and into the fridge overnight.
