Found on Youtube by a fellow who looks like he knows what he's doing. I will be trying this. I watched and typed up a recipe. The translation to a typed recipe is mine, but do watch the video and let me know how I can improve my recipe:
Thai Bluegill (saephacc on YouTube)Scale, gut and remove head and fins of small bluegills. Up to a dozen small bluegills is fine. This is best for the little guys too small for a fillet.
Ginger root, sliced thin, say a half inch of root or 8 diagonal slices.
2 or 3 cloves of garlic, chopped
1 stalk of lemongrass, smashed and chopped in a few pieces
2-3 Thai chilis, sliced in two lengthwise (could sub a little squirt of Sri Racha sauce near the end of cooking)
One medium meaty tomato, or two Romas, coarsely diced
One spoon of red curry paste
Three or four stalks green onion, chopped
10 stalks of cilantro (about the same amount as onions), chopped
Add several Tbsp of veggie oil to a deep pan or soup pot, fry garlic and chili. Add fish and stir, add a few pinches of salt and stir again. Add red curry paste, ginger and lemon grass, stir. Add a little water to make soup base, maybe half a cup at first. Add tomatoes, cover and simmer a bit. Add onions and cilantro, simmer until soup is nicely colored.
Serve hot, pick fish from bone.
