Some asked me yesterday about how to ice fish.. I wrote an SOP for the Wisconsin Department of Agriculture which was adopted by local FDA. The sop was for the safe transport and sales of fresh shrimp.
Add layer of ice then lay fish up like there swimming. pack with ice, add layer of fish, then ice repeat until you reach the top. The reason for laying fish up..is becuase you can pack twice as much as... Shrimp will hold like this for about 7 days. so i assume fish will also, as long as you drain and add more ice everyday. At 7 days our shrimp will still be at 29 degrees. We pack our red snapper the same way, and they hold for about 5 days. Hope this helps

If I'm going to have to ice them more than over night I make sure they are gutted and rinsed out.
Over two days (hardly ever do that), I Filet them out, bag in water then pack the bags in ice.
