Thought I'd add this here too. Folks are posting recipe's in the Open Saltwater forum. It's soooo good!

2 pounds hand shredded trout
3/4 pound of shrimp, de-veined, hand shredded
1 REALLY LARGE onion, chopped
1 LARGE green poblano pepper, chopped into longer pieces
1 red bell pepper, chopped
6 slices THICK bacon
10 oz. sliced frozen okra
3/4 C instant brown rice
10 Cups water
1 14-1/2 oz. can chopped or stewed tomatoes
1 can diced tomatoes
1 Can Rotel, regular
4 chicken boullioun cubes, boiled in 1 cup water,
dissolved
1 tsp. cajun-style seasonings
dash cayenne
salt to taste
1 Tbsp. lemon juice

Cut bacon into 1" pieces, and fry bacon in a large soup pot. Remove crisp cooked bacon and reserve. Add onions and peppers to the hot fat, cover, and cook gently for a few minutes until onions are clear and peppers are softened.

Add five cups of water to the pot, bring water to a boil, then add the dissolved chicken boullion. Stir and let simmer for five minutes.

Now add all water to the pot. Next, stir in okra, corn, brown rice, tomatoes, Rotel, and cajun seasoning. Heat to a boil. Turn heat to medium-low and cook for approximately 10-12 minutes until veggies and rice are cooked.

Next, add broken up trout, shrimp, and crumbled bacon. Bring back to a boil, and the moment it begins to boil, turn off the heat, cover, and let sit WITHOUT stirring for 20 minutes.

Open, stir in lemon juice, cayenne, salt and pepper to taste.

Serve over more brown rice, or over cornbread. Either way, this is probably what Heaven will smell and taste like when you get there....(those of you that aren't potlickers.....)
