Got a call yesterday from I guy I met fishing said the bite was on at the jetty. King macks, Spanish Macks and Jacks. Well I got there at 6am water was clear and blue I was the first one out on the jetty. Walked out about 3/4 of the way down and started throwning my Rat-l-trap. Fish were breaking water all around chasing bait fish. First cast, wham fish on. 45 minutes later. 32 lb Jack Crevalle. Good battle with my 12lb. test and wire leader. Managed another a little while later. Bottom fish was the smaller of the two.

Are you planning on eating the jacks? I thought they were merely a sport fish.

I wouldn't those Jacks but they are a heck of good fighting fish. Congrats.

I wouldn't either but since I saw that blue nylon stringer thru it's lip I was wondering if that was the plan. Maybe just saving it for the photo.

I had to gaf the biggest one, the other I revived after several minutes. There was some orientals there that told me they were good if you marinated them and seasoned them alot. When I cut the fillets out of the one side I noticed it was really bloody. Made me kind of leary, but the other side the meat wasn't as bad. I guess the blood drained to the that side. After I put the fillets away, I searched the web for Jack Crevalle eating and most of it wasn't too good. Most say if you gill cut them fresh, they will bleed out and the meat will be better. And ice them fresh, thats helps with the blood too. I'm game for anything once. We'll see at dinner time. lol

Well, I got about six big (I mean big 4"x10"x1 1/2") fillets out of the best parts of the Jack, marinated them all day in a combination of garlic, soy sauce,lemon and every spice I had in the cabinet. Pan fried 3 of them, one blackened, one cajun and the other with breaded fish batter. Overall rating 5. The best one I thought was the blackened one. Still a very fishy taste. The ones I have left are actually the cleaner of all the fillets.(whiter meat less red) I am going to grill them at the beach tomorrow while trying to catch something else. So far the whiting fillets have been the tastiest of my catches so far, with the specs a close second.
