I've heard of people putting beets in red velvet cake to keep them moist but I don't think I want any.

I pickled some that a guy I work with grew. Pretty good if you like beets.

One of my Mothers favorite dishes from years ago was to take a couple of cucumbers, skin them then slice them into rounds about 1/4 inch thick, place them in a Tupperware bowel. Slice a small onion into rounds and add them to the cucumbers. Then peel and slice a medium sized beet into about 1/8 inch thick rounds and add them to the onion and cucumbers. Fill the bowel with vinegar, cover with the lid and place in the refrigerator for two to three days to cold pickle.
Use your own judgment as to how much of each ingredient you want to use based on the size of the bowl you use and your own preferences.
Mom would keep a supply of these munchies in the fridge all summer long.

Wash fresh beets, place in large pot and boil 30 minutes. This will allow you to remove the skins without losing any of the flesh. Slice them 1/4" or cut in quarters, add 1/4 cup of vinegar and 1/4 cup of sugar and simmer for 30 minutes.
Cool, refrigerate and enjoy. My grandmother made these during the growning season and we loved them, the sweet-sour taste.

I'm sure you already know this. Pick your beets from the garden when they are young, otherwise they get really tough and woody.
