Cracker Meal, McCormik. Dip fish in milk/egg and roll in cracker meal. Oh, and add salt and pepper.

Put fillets in a big bowl, squirt some mustard on them, mix in the mustard, add salt and pepper, mix again, take fillets and roll in yellow cornmeal, drop in hot oil and eat away.

Marinate fillets in buttermilk and lemon juice and dab of tabasco for twenty minutes. Lightly coat fillets with Zatarains and deep fry in peanut oil until it turns a light golden brown. We fried some last night in peanut oil with Zatarains Fish Fry and they were most excellent! To me one of the keys is the temp of the oil...it should be 350 degrees for best results. I like Zatarains because it's not too expensive, it's very simple and I don't have to add anything to it.

Ok Try this take salt teens crackers crumble them up to almost dust. Then coat fish in egg dip in to crumbled crackers cook and serve. No salt needed as its in the crackers. Just a plain and simple. Also "bobby-catfishing" and check out recipe. It's killer. Bobbys Recipe Good stuff

1/2 & 1/2 corn meal and panko bread crumbs, I soak my filets in milk and cholula hot sauce.

Zatarain's southern crispy. I soak mine in mustard diluted with a little beer. I prefer mine with a crispier crust, so I fry at 375 degrees.

beer batter for sure! the kids love it and tastes great!for the older set, i like to dip the fish in egg wash with a little hot sauce in it, and dust it with cornmeal,....yum! it doesnt last too long, so if your the fry guy, eat when it comes off, or you wont get any!

All of the replies are making me hungry. I love to eat fish. I really doubt there is a recipe that will turn me off the feed so to speak.
I read several of the recipes at the back of Crappie Magazine in the past. I even tried the one called Microwave Crappie. Essentially you grabbed a filet, smeared mayonaisse on it, nuked for 3 minutes and then you ate it.

Zatarain's Southern Crispy and yellow corn meal 1 to 1. If you like more cruch, add instant potato flakes instead of corn meal. Pre-soak in milk or buttermilk is good also.

I know a bunch of folks in east Texas that use the mustard method on the cats and it is pretty tastey, but on crappie I like the LA Fish Fry. I prefer that sweet meat not be masked by anything too spicey or heavy. Fry it hot and fry it fast.

1 cup flour 2 cups corn meal Salt Pepper Garlic powder Onion powder, or dried flakes Lemon pepper Chillie powder All seasoning is to taste. I prob use about two table spoons each. Put in gallon ziplock bag and shake fish in it.
