At our fish fries we usually just used the extra corn meal dredge, and mixed it with the left over egg wash until it made a formable dough. Then mix in some diced onions and jalapenos. Form them into balls and drop them in the fryer. Doesn't get any easier than that.

These are what I make with fired fish, salmon croquettes, crab cakes, etc.
Jalapeno Hush Puppies
Ingredients 1 cup self-rising flour 1 pkg. Zatarains 1/2 cup diced onion 1 (7-ounce) can diced jalapeno peppers, drained or 3/4 cup fresh jalapenos, seeded and finely diced 1 (15-ounce) can creamed corn 2 large eggs, lightly beaten Salt and freshly ground black pepper to taste
Directions 1. Using a mixing bowl, stir together the flour, Zatarains, onion, jalapeno, corn and eggs until blended. 2. Add salt and pepper to taste. 3. Allow to stand 5 minutes. 4. Drop the batter by teaspoonfuls into the hot oil. Don't overcrowd; leave room for the hushpuppies to be turned. 5. Cook the hushpuppies until golden brown, about 3 minutes. 6. Remove from the oil with a slotted spoon and place on paper towels. 7. Keep the cooked hushpuppies warm in an oven while cooking the remaining meal.
This is an excellent spicy ketchup.
Spicy Ketchup Dipping Sauce
Ingredients:
1 cup ketchup 1 t. crushed garlic or 2 cloves crushed 2 tablespoons dark brown sugar 1 tablespoon white vinegar 1 t. chipotle Tabasco t. smoked paprika t. cayenne pepper Salt and pepper to taste
Directions:
1. Mix all ingredients well. 2. Serve with sausage balls, hush puppies, fish, etc.

sounds good, sometimes I will add some lump crab meat and old bay to the mix.
