Im a barbecue guy, and a fisherman. I fish at a lake that has a ridiculous amount of catfish and this weekend I am finally going fishing again, works been busy. Im trying to lose weight so instead of frying my catfish I was thinking about smoking them with some mesquite. Anybody ever done it?

I bet you would have to buy special rolling papers.

Do it all the time, whole or fillets. Wrap in foil, butter, lemon sauce, salt and pepper to your liking!

They don't take long either.
It's good

Not smoked, but I grill them quite often:

The photo is catfish.

I have been smoking catfish and a lot of other fish the last year or so. Love the flavor. Do a lot of cajun seasonings and have been experimenting with a lot of other rubs. Covered my fish with jalepeno's then put a layer of onions and then a layer of dill and then covered with lemon slices. Turned out real good. My grandkids like to put salt, pepper and paprika on crappie fillets and have me smoke them.
One of my favorites is like Longeye's recipe. Fill aluminum with butter, salt, pepper and I put in a bunch of cayenne pepper sauce. Leave the top open for the smoke to enter and let them cook in the juices.

I grill fish often but not really smoke it. I prefer a good cajun rub then grill over mesquite.

At Rudy's barbecue in Corpus Christi they have smoked catfish every Friday (they have a big sign), but I have never made it work schedule wise for me to be there on a Friday to try it?
