This is my favorite way to make bass

Makes 6 servings

2 lbs. farm-raised striped bass fillets
1/2 C. grated Parmesan cheese
1 T. margarine, softened
3 T. reduced calorie mayonnaise
3 T. chopped green onion with tops
1/4 t. salt
Dash Tabasco

Place fillets in single layer on well-oiled baking pan. Combine remaining ingredients and spread mixture on fish. Broil fish 6 inches from source of heat for approximately 10 minutes, or until top is lightly browned and fish flakes easily when tested with fork.

it is delicious!

Put any dry seasoing that you like on steak
We like it with old bay, garlic powder, oregano, pepper and rosemary
Grill skin side down

Hooking a fish is like playing string with a cat. The exact size, shape, color of string matters less than how you wiggle it- and little cats are easier to fool than big ones. John Gierach

Where do you get farmed raised stripers.

First off get you one of these:
Then coat fillets with olive oil on both sides and sprinkle garlic POWDER ( not salt) and lemon pepper on both sides.. Spray some pam olive oil or any kind of oil spray liberally on the grill pan above and put it on the grill and let it get HOT!!. When it is hot put the seasoned fillets on the pan and cook them 3 minutes each side and YUM YUM !!! smile

From the farm, of course!

I don't use "farm raised" striper. You can use any old lake striper or white bass or hybrid.

Not grilled, but baked. I use this simple recipe when baking fish. I really like it, but you have to like dill.

Take a Corning Ware glass baking dish. Salt and pepper your filets, place them in the glass dish. Slice about 3 pieces of real butter and lay them on top of each filet. (thin slices of butter 1/8 inch). Then sprinkle with dill. Cut a bunch of lemons into thin slices and lay over the top of the butter, this holds the butter in place for a while longer. Bake uncovered until golden brown around the edges. Mmmm-mmm!!

I always use a seasoned cast iron skillet. I sprinkle McCormick Season All, ( seasoned salt ) sparingly , not thick. Small amount of either Olive oil or Canola oil. Heat the skillet, season the fillets, approx. 3-4 minutes on each side. They are done.
