I have never tried this. I don't know how long they would keep, but a guy told me about an old timer that would bread his fillets then freeze them. Then he would just take them out of the freezer and throw them right into the grease. I would assume you would have to freeze them flat on a cookie sheet before putting them into bags or they might stick together. What's everyones thoughts on this?

Same here. truely one of the best ways to keep your fish. I will use a marker and put the month and year & number of peaces on the bag. I agree.It will keep for over a year.

You know I really do not know how long they keep in water, but it is a really long time. I found a bag in the bottom of a deep freeze that was over 3 years and still good except where the meat was against the plastic bag. Here is my thought, if you put them in water and they go bad before you eat them, you do not eat enough fish to justify keeping them.
Can someone explain how the Feds count recreational Red Snapper catch?

Cookie sheet or wax paper would work. I've battered/breaded vegetables then frozen them like that.

Hint: For freezing fillets in bag w/water.... Lay the bag in an appropriate size meat loaf pan (metal or plastic) to start the freeze. After solid remove from the pan. Now you have fillets/water frozen in the shape of a brick which makes stacking easier.
