I've used bass and crappie and both work very well but as far as from the store....tilapia works the best. If you use shrimp throw them in boiling water for 30 sec. and then put them in ice water. I love civiche'!!!!!!


The day after catching a lot of fish is still a good day.

Why...the shrimp thing? When do you put them in after you've par boiled and cooled them? Do you not allow the marinade to cook them?

Orange roughy is a GREAT fish for Ceviche. The employee at the fish market had suggested using it because I love the fish itself. Now I have to go back and get some....do ya'll see my arm twisting? Steven

I have always used Cod or Haddock. I like the mild flavor and big flake to the flesh.

Bonita, hands down makes the best ceviche. Albeit a little oily..


Just kidding......bass crappie and snapper as well as small grouper make great ceviche.

Fried catan mmmm I remeber those days. We used to bow fish for gar then skin them and deep fry them in a "disco" con manteca de puerco. As for what is good ceviche fish I suppsoe any mild tasteing firm flesh fish would do, we always use sandies and crappie.

I vouch for Triggerfish. You need to get through the tough skin but the flesh is fantastic in ceviche or cooked. Baja Style!!!

True fish facts:
Orange Roughy is weak! It's basically the most bland fish in the ocean. If you like choosing Matza as your favorite cracker. This is besides the fact that you only can get it previously frozen and the fact that commercialization and over-fishing has dramatically depleted the fish stock. Much like many other deep water fish, it is prehistoric looking and extremely slow to reproduce. I'm no tree-hugger but this is one fish that people should not support buying. Make no mistake I sold plenty of it at my restaurant until I learned of the facts behind the species and decided to stop buying it. It was easy to convince others who liked roughy of other substitute species.
