I broiled some the other day and they were very good. Do em just like a flounder and you get a treat. Tony's, lemon, and rosemary and maybe just a little bit of butter to keep them fattening.

Also, periodically I give some fish to our local Priest and he just guts them and cooks them over slow coals leaving scales, head and all on. I haven't heard him complain that he didn't want any more fish.

Try wrapping your crappie in foil and put it on the grill for about 35 to 40 mins. I put garlic butter, bell pepper, onions(sliced), and a little bit of lemon pepper. I can tell you this that my wife loves it made this way. P.S. do not close the foil all the way leave a small opening at the top.

Drag fillet through seasoned flour and pan fry in real butter. Place fillets to the side add another stick of butter to drippings and 1 pound of peeled shrimp or crawfish. Sautee til done then add 1 pint of heavy whipping cream. Season with salt and cayenne and puor on top of fish.
