I got ahold of some vinegar type sauce at one of our local joints a while back. I'm hooked.
Wonder if any of you guys have a good recipe?
I'm not totally swearing off the tangy/thick stuff but would like to mix it up a little.
Recipe for Vinegar sauce anyone??

I use this on rotisserie pork roasts, and when I slow roast an entire pork butt in the oven. It's also very good on pulled pork sandwiches. Your mileage may vary, but give it a shot....
Pork Vinegar Sauce (use to marinate, as a rub, or on a sandwich)
Ingredients:
Apple Cider Vinegar (16 oz)
Dry Bar-B-Q seasoning (1 tsp.)
Cayenne Pepper (1/4 tsp.)
Crushed Red Pepper (1 tsp.)
SeasonAll (1 tsp.)
Black Pepper (1 tsp.)
Hot Sauce (1 tsp.)
Liquid Smoke (1 tsp.)
Worcestershire Sauce (2 tsp.)
Mix all ingredients and shake well.

Tx-Weeble: Here you go. Texas BBQ Sauce Recipe 1 c catsup 1 T sugar 1 T Worcestershire sauce 1 t salt 1 c water 1 t celery 1/4 c vinegar 1/8 t Tabasco sauce In sauce pan, combine all ingredients. Heat to boiling, let simmer for 30 minutes. Slather this BBQ sauce recipe on all your favorite meats and seafood for a tasty Texas-style barbeque. I never measure and it always seems to work.
Tomato Sauce (good bit) (Ketchup works) Apple Cider Vinegar (a little less - maybe half) Lousiana (or Tabasco) Hot Sauce (lots of shakes) Worcestershire Sauce (about the same) Creole Seasoning (never enough!) Dark Brown Sugar (handfull or two) Garlic Powder (few shakes) Just a bit of Olive Oil Just a bit of Lime Juice
Simmer and stir a while.
I like the tangy kick as well as some heat, so I have more sour and hot parts than sweet. You can lessen those (or eliminate some) and / or add some honey if you like a milder sauce. Good luck.

earlyangler we have the same philosophy but does everybody get as agitated at you as they do at me when they ask for a recipe and I give basically the same description you just did. My friends have quit asking me because they know my response will be something like...well you put some of this but not too much, a little of that but make sure you put enough.

Thanks all. I think Sykotic is prescribing about what I'm look for. This stuff I tried at the BBQ joint didn't have any tomato that I could tell. It was kinda thin and cloudy. The BBQ bun actually held the flavor in. I would like the same thing, maybe a little thicker. IF I was guessing it would be a K.C. area pork type sauce. It worked really great on the sliced brisket sandwich too.

Tx-Weeble, I love BBQ sauce with no sugar at all. You can experiment with Sykotic's recipe by simmering it until it reduces. That will thicken it without adding anything and the flavors will be more concentrated.
Another way to thicken it without changing the flavor is to thicken with cornstarch or arrowroot.
Does anyone have more BBQ sauce recipes with no sugar or catsup (catsup has a ton of sugar in it).

I used Sykotic's recipe this weekend for some ribs and a smoked pork shoulder. I just heated it up on the fire box of the smoker. Excellent.. I noticed everybody sopping up their plates to get all they could and they didn't leave any sauce for leftovers. One of my brother-in-laws even put some on top of his cornbread. It's a good change of pace from the sweet sauces. Thanks Sykotic...

Whelp..... I'm going to have to try that heated up version myself. Sounds yummy. Glad you like the recipe, have to admit it is my father-in-laws, but we use it all the time. Now, I get to learn something new and heat it up. Maybe this weekend.
