Does anyone know of a recipe using instant potatos for fish batter. I ate some crappie rolled and fried in this mix and it was good. Any help would be appreciated.

Found this one, note the footnote that the fillets can be grilled or sauteed....... and why not deep fried????
Quick, Easy -N- Fast Crusty Potato Fish Filets Recipe
6 white fish fillets, about 3/4 inch thick 2 eggs, beaten 1/2 C. fresh lemon juice pinch salt pinch freshly ground black pepper 1 4 oz. pouch roasted garlic mashed potatoes or regular instant potatoes
Heat oven to 400F. Cover broiler pan with foil and grease well or spray with nonstick vegetable spray.
In medium bowl, beat eggs and lemon juice; add salt and pepper to egg mixture. Empty pouch of potatoes into separate medium-size bowl.
Dip fish fillets in egg mixture, then into dry potatoes and coat both sides. Spread fillets on prepared broiler pan and bake in preheated oven for 10-15 minutes. Set oven to broil and cook tops until golden brown.
Makes 6 servings.
Note: Fillets maybe grilled or sauted in hot vegetable oil.

I just use fine ground saltines. Dredge in flour, then egg/milk wash and then crackers. Fry to a golden brown!  I don't want to cover the delicate flavor of the fish.

beer batter is the best, use a pinch of salt and pepper, a little flour, some egg youlks, milk, and beer. I would have to look at the house for the exact measurements, but I usually come up with my own by just tossing in more or less, you know whatever I might be in the mood for. After you dip the fish fillets, fry them in cooking oil(just enough to cover the tops of the fish). Cook until golden brown. This was a recipe given to me by my Grandpa who was a life time fisherman, and I have to admit it is one of the best. Good eaten to ya, and hope you enjoy the recipe.
