Do those of you who prepare LMB for cooking favor either scaling and maintaining the skin, or filleting off the skin entirely? confused Thanks,

Fillet unless you are going to grill them. If grilling; leave the skin on as a protection and cook skin side down. Then when it is done, simply take your spatula and lift the meat off the skin and serve. My family likes them cooked fried or grilled with some lemon pepper and butter. Just don't forget to clean the skin off the grill. Better yet go to walmart and get one of the disposable fish grates in the grilling section and throw the whole mess away when done.

Or, if you remove all the skin, only grill it on one side. On a burner next to your grill, have a pan filled with white wine, bubbling. As soon as it's done grilling on one side, flip it in the white wine on the other side to finish it off. This way you don't dehydrate the meat, and the wine adds loads of flavor.

If I catch one in the gills on Pool I clean it and treat it like lobster, seriously.

I may have said that wrong. What I meant was I cherish it, cook it seperate and wouldnt dare dowse it in catsup or tarter sauce.

Just fry it and maybe top it with a little lemon juice.
