So when you go into a new BBQ place what is the first thing you order??? For me it's Ribs...

I go for what they have a reputation for. Brisket, Ribs, or Sausage. If I don't have any prior info, and the place looks like they know what they are doing, I try the brisket. If it looks fly by night, I play it safe and go for the sausage. I've been served too much crappy brisket to risk it.

Brisket or ribs or both. Also ask about the type of sauce(s) they use. Are they sugar based or vinegar based?
I guess I'm too picky but if the first impression of the food is not good I rarely give them a second chance.

Brisket and sausage. Depends on what part of Texas I'm in what my reaction is going to be to the sauce, but its always served on the side. Sauce is only there to cover up the sins of a bad cook.

I usually go for brisket and sausage. Maybe pulled pork if it's been recomended. If the sausage looks like Eckridge or Hillshire Farms I'll pass. I like a home made looking sausage with a reel casing and some black pepper showing through.

I order it all, brisket, sausage, ribs, chicken, I've got to try it all and make sure what sucks, is decent, and is good.

I will be trying Hard 8's in Roanoke soon. The newest edition to restaurant row through old downtown.
I usually judge by a places ribs and brisket, so this will be the category I will be sampling.
