I own a Skeeter sx176 with a yamaha 115. The engine has a 21 pitch prop on it now and i can only get about 53mph out of it. Does anyone have any suggestions on how to get more top end speed? Would changing to a 22 or 24 pitch make that much difference?

What are your RPM's at 53 mph?

I could be wrong, but depending on the amount of extra weight on board between passengers, tackle and equipment, I would imagine that 53 mph is about all your going to get out of a 115 hp motor on that boat. A change in prop pitch might give you 1 or 2 mph top end, but you will probably notice a slower hole shot too.

53 mph is at 5500rpm's. That's max speed with just myself and 1/2 tank of gas.

That is going to be pretty much your max. Yamaha's aren't meant to go over 5600 or you void the warranty. Although a different prop might change performance and speed a little you are at max RPM's so you shouldn't get much of a change in speeds with a different prop.
