The paper work says only use Lowrance epoxy. Is it that special or will any epoxy work?

Don't use the fast-cure stuff. You can go to Lowes or Home Depot and pick up the 2-hour marine epoxy made by loc-tite and that should work fine. I've heard the fast cure stuff gets really hot while it's curing and can damage the electronics in the transducer.

also get some cheap silicone and make a circle big enuff with a half inch bead in diameter to set your transducer in before you epoxy it down. set the ducer in the circle full of water to check for any air bubbles in the fiberglass. if it reads good remove the silicone ring and eypoxy it down with pressure to remove any air bubbles in the epoxy...

You will get better results by installing the transducer with polyester resin (fiberglass resin). Use some plumbers putty to make reservoir area and then fill it with catalyzed resin. Put the transducer in the resin and put something heavy on it. If the resin is good and you have prepped the surface well, it will never come off. And, having the same medium between the 'ducer and the hull as the hull is made of will reduce the signal loss from shooting through the hull.

It's vitally important to make sure it is perpendicular to the water and well out of the path of any aerated or agitated water.
