Skin the legs and eat them on the big ones. Tried it once, lean meat that is best used for soup. It is also chewy, similar to fried squid. Red meat for the most part.

The neck has some good white meat. We use to fry them in cornmeal.

Used to get top dollar for those. Really good eatin. My Dad caught and cooked these things all the time when I was a kid. Made great soup.
On average, your heart beats 100,000 times a day. One day, one of those heartbeats will be your last. Then what?

My Mom made soup out of them when I was a kid. Sure was good. They are a mean son of a gun. Got to be real careful with little ones around them.

I pulled a 26 pounder out of a pond in Keller using a bread ball over a treble hook. I often catch little ones on worms, but I was shocked to pull one the size of Curt's picture there out of a community pond.

Softshell and Snapper meat is great in a Gumbo. I prefer snapping turtle over the softshells though.

Im surprised that soft-shell didnt bite. The ones in Florida have a bad temper really hard to pick up because of their extremely large neck
