i like them grilled on foil.just season them to taste.throw on grill til done the are great.have also had them fryed.

i agree, grill'in is good, preferably on wood or coals...but pretty good, lightly seasoned.

I also grill them on foil, skin side down with the grill cover closed and really high heat. I cover them in a mixture of lime juice, mayonnaise and Tony Chachere's. It's really good...I use the same recipe for kingfish.

I like to get some olive oil roasted pepper, make a mash, and coat the fish, then grill and make tacos.
