Anyone have any good King Fish Recipes? We went to Port Aransas,  and have ALOT to cook up! Thanks~

I have a great one, and it's simple:
1. Filet kingfish and remove all brown meat 2. Mix one cup full fat mayo, juice from one lime and Tony Chachere's Cajun seasoning to taste (maybe one tablespoon). Mix thoroughly. 3. Lay kingfish filets on foil and coat them, top bottom and sides in the mayo mixture. 4. Put filets on foil on the grill for 12 or 13 minutes with the lid down at 425 degrees F.
Enjoy! It is the only kingfish recipe I make.

I have always fired my kingfish. But to get some of the fishy taste out I dip the kingfish in louisana hot sauce and then in the fish batter. It makes it spicy but not hot. Or I have just dumped the hot sauce into my oil and fried them that way.
Kingfish are pretty fishy tasting to me and one thing that I have heard doing is to coat the fish in mustard before frying them and it will kill the fishy taste. But I have not tried it yet

I was told this one many years ago and use it on Kings quite often when I'm not grilling them for Mock Tuna salad.
Mix equal amounts of Worchestershire sauce, Gin and butter with your favorite seasoning (leave off anything with salt, Wor-sauce has enough in it) and grill over hot coals until fillets begins to flake through...pull it off and get after it.

Like bream buster said"mock tuna salad".
When we have Kingfish we never make tuna salad sandwiches. The King is far superior.

Put it in a skillet with a little olive oil....salt and pepper it a bit .....add soy sauce, fresh ginger (only a little bit) and chopped green onions. Let it cook a little on one side flip and cook other side...do this until cooked through. Sandra

It's not bad blackened as long as it's fresh.
Remove the bloodline and any dark meat first.

You can also zap them in the microwave and then make croquets with the meat. You can freeze the croquets for later use.

Grilled kingfish 2 Bay leaves 1 c Vinegar t Thyme 1 Kingfish steaks The steaks should be 1 to 1-1/2" thick. Prepare marinade by blending 2 bay leaves, 1/2 tsp thyme and 1 Cup wine vinegar. Heat in saucepan to blend flavors. Cool before marinating. Submerge steaks and marinate for 30 minutes or longer in marinade. Drain before cooking. Barbecue approximately 12 minutes, turning once, approximately 3" from the charcoal. ___________ cascade coupons
