This is a change if you want something new
1 bag of lay's potato chips crushed.Dip fish in spicy mustard and roll in the chip's -- quick fry and eat -- not bad for something diffrent.

Tried a new way (at least for me) dropped the filet in Frenchs Mustard then into a store bought batter . dropped them in a pot of peanut oil at 350. wasnt really thrilled at the idea till I tasted the first one, I think we will try the spicey mustard next time, to just heat it up a little. Man it was tasty
This may be an old way to cook them but i have never heard of it nor tried it, im hooked

I made fish tacos with crappie one night and it was better than any fish tacos i have bought prepared....This was the first time i used beer batter on crappie...i usually use cod when i batter fish.

Beer Batter for Fish or Shrimp

12 ounces light beer
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon paprika
1 cup flour

Pour beer into a large bowl.
Sift together 1 1/2 cups flour, salt and paprika.
Whisk dry ingredients into beer until light and
fluffy.
Get your oil hot and place 1 cup flour in a
separate bowl.
Roll fish or shrimp in flour and shake off excess.
Dip into beer batter, coating well, drop into hot
grease.

Zatarains is best but Louisiana Fish Fry is good too. Fry in oil at 350 degrees until they float.

You can also use Tony's and Lemon Pepper and pan grill them with onions, peppers and mushrooms. Spray with Pam or coat the pan with Olive Oil first. Takes about 3 minutes to cook.

Steam in a packet made of foil and bake. Make the packet, add slices of your favorite citrus (lemon or orange) and some herbs (like thyme and parsley). Add around 1/4 cup of white wine and seal the packet. Put on a coolie sheet and back 350 for about 20 minutes. Let it rest on the pan out of the oven for 10 minutes (there will be carry-over cooking), but DON'T open the packet til you are ready to eat. It should be flaky and steamed perfectly. You can add mushroom, yellow or zucchini squash or snow peas to the packet with the fish, to steam along with it. (no hard veggies.)
