I prefer small black largemouth, spotted or guadalupe bass any day over white, hybrids or stripers.

My opinion further on white bass. You are what you eat. And whites eat a ton of shad and taste like shad to a degree. Shad are a nasty tasting fish. Several more mature people from SE asia have taught us to take such fish and soak them in salt water for an hour, rinse thoroughly after that, pat dry, then prepare for cooking. Others soak in milk. This process is pulling some of the odd flavors out of the fish and giving it a neutral taste. Some people don't soak and just clean and cook. I think most of the time, these people are deep frying the fish with some sort of flower, corn meal or batter. The deep frying and coating hides all the flavors of fish anyway so you can't tell if you are eating catfish, whites or snapper, for the most part. I can't eat that food as it is not good for the heart. So I usually saute, poach, broil or grill fish. The flavor of the meat stands out more. For black bass, the meet is always tasty for a fresh water fish.

Couple years back I went to PA to visit one of my old Navy buddies that lives in the Pocono Mtns. We got up early one morning and hit a local pond that was filled with 1~1.5lb bass. We filled a 5 gallon bucket full of 'em and filleted everyone of 'em.
They were every bit as good as crappie, if not better!

They are not very different from crappie and large mouth bass. They'll hit about the same kinda lures I have caught most of mine on jigs ussually black and chartruese or red and chartruese useing a 10ft B&M jiging rod they feel like monsters when you get one on a long rod like that "try it sometime" and yes I like to eat them I just cook'em up with what ever else I catch pretty clean tasting fish.

White, black, hybrid, or striper, are all good. I use a filet knife to take off most of the bloody meat on other than black bass. Don't forget bream and perch are awfully good to eat.
