Here's a good corn bread recipe. Put a tablespoon of oil or bacon grease in an 8 inch cast iron skillet. Place in oven and turn on to 350 degrees. Then mix 2/3 cup of cornmeal, 3-4 diced pickled jalapenos, 1/4 cup of corn kernels (frozen is fine), tsp. of baking powder, 1/4 cup of grated cheese, one egg. Stir all this together and add enough buttermilk to make a batter that will pour into the skillet with some help (spatula). When the oven is up to 350 degrees, take out the skillet and pour the oil into the batter. Stir some more and then empty into skillet. Bake for 30-40 minutes until brown spots start to appear on top. Double the recipe for a larger skillet.

I use boxed corn mix and sub sour cream for 1/2 of the milk that called for. It gives a really tangy taste. Try a few dashes of hot sauce and sliced green onions and it's like mexican corn bread.

Try using a small can of cream style corn insted of the whole kernel. It really imparts a sweeter flavor and moister texture.

What about adding some bacon? Fry it crisp, break it up and add pieces to the batter.
