Does anyone have a good beef jerky recipe? My kids are going through a bag faster than I can buy it and it's getting expensive.

Buy yourself a dehydrator and some chuck roast. Slice it about 1/8th in. thick (it helps to put in the freezer for about an hour or two before trying to slice). make 'em however long you want but at least a couple inches wide as they shrink considerable. Season 'em up however y'all like, salt, pepper, teriyaki. I've tried bbq sauce and that doesn't come out very good.
You can do the same with just your oven set on 150 or so but the dehydrator doesn't heat up the kitchen like the oven. Dehydrator's also excellent for drying apples, apricots, tomatoes, etc..
Venison is even better, if you have any. Doesn't take as long to jerkify either.

I bought the backwoods dehydrator at Aacemy and a few packs of their jerky seasonong. I then but the thin cut steak and I will cuyt into slicles about 2" wide and 4" long. I add the seasoning as directed on package plus a little extra garlic, red pepper seeds and some soy sauce. I add just a hint of Liquid Smoke and place in dehydrator for a few hrs. Comes out great especially the hickory variety. Better than store bought and its probably th best $40 I have spent. Used it 6-8 times now and I make a few pounds at a time.

I'll get a chuck roast with little fat. Place in freezer like above post. Slice with electric knife 1/8" thick, place in bowl and add soy sauce,worcestershire sauce, hickory smoked salt and pepper, and place in covered bowl in frig overnight. Get up in the night and remix in bowl. Place strips on dehydrator and sprinkle more hickory smoked salt and whatever seasonings you like. Set at 150-160 and let it go for about 6-8hrs. After a couple of hours I rotate my shelves. Bottom to top and so forth. I let mine run all night. When done lay on paper towel and dab any oil spots. Let cool and place in jar if it last that long. Frank I agree with everything said. Brisket and eye of round roast are also good cuts for making jerky.

cup soy cup worcheshire tbsp honey 3 tbsp red pepper seeds black pepper,ginger,seasoned salt,garlic powder,cinnamon cup of boiling water
marinade for 24 hrs

However, after slicing the meat ( I usually buy sirloin on sale or round steak) I soak it in soy sauce and throw in some liquid smoke as well overnight. The next day smoke the strips with some mesquite wood for two to three hours very slowly so as not to cook them but add some flavor. Take off the smoker and then put in dehydrator after sprinkling them with Greek Seasoning. Store in vacuum sealed bags in freezer.

I use liquid smoke sometimes but haven't tried a little actual smoking before the dehydrator. Gonna try this next time I make a batch.

Found Skillet Steaks at Brookshires Friday for less then a $1 a pound. Perfectly cut 1/4" bought all they had and ended up with 6lbs of jerky.

get a dehydrator meat slicer freeze meat for a couple hours slice thin put in a gallon zip lock bag put Worchester cayenne lowerys pepper Creole let sit overnight in fridge then start to dehydrate.. that is how i make mine

This is nothing fancy, but it's the only one I've found... "Beef Jerky" - 1/2 pound 1 lb. boneless beef round steak 1 1/2 tsp. garlic salt 1/2 tsp. pepper 1) Freeze meat 1 hour to firm (makes slicing easier); trim and discard fat from steak. Cut steak into very thin slices. 2) Place strips in single layer on wire rack in jelly-roll pan. Sprinkle with garlic salt and pepper. 3) Bake at 200* about 6 hours until beef is dry. Cool; store in covered container in refrigerator. _______________ cascade coupons
