Just wondering because I have seen some people with buckets full of them. If so what recipes are good?

if they are big enough (over 8" or so) just filet them up and fry them.

What works to catch em? Worms and bread dough?
Im thinking about hitting up a pond not to far away and apparently they have some good bluegill stocks. Really after some bass.
What fish do they most taste like?

If you are on Lavon, go to Leroy's and get you some meal worms. They love them and are no where as messy as earthworms. I catch big ones out at East Fork marina, but the water is getting real low out there now.
Scale them, gut them, and fry them whole. Good eating!

Appreciate the advice! Think I might hit up a pond north of me and tear em up. It's been a few months since I have caught some fish and ate em, its just pretty darn tasty!

First, catch a mess of bluegill or other sunfish. Use a #10 gold Aberdeen hook and #3 split shot about 3 feet below a bobber. Bait the hook with very small pieces of worm - no more than cover the hook.
Then do one of two things: 1. Fillet them with a very sharp knife or 2. Scrape the scales off and wash with a good hard stream of water. Cut off the heads. Gut the fish and clean the body cavity.
Personally, I always fillet my fish. Anything over about 5 inches makes 2 good fillets.
Now lay your fish on waxed paper. Take a basting brush and coat them with mustard. Sprinkle the pieces with salt and pepper.
Fry the fillets or whole fish in hot canola oil until golden brown.
Serve with cornbread, home fries and coleslaw.
Many people consider sunfish the very best eating fish found in the Southwest.

I love them fried, but every once in a while I like to make some "poor man's shrimp" with them..
Bring a small pot of water to a boil Add a small bottle of "crab boil" to the water Add a teaspoon of Tony's to the water. Drop in 10-20 bluegill fillets (thawed) Allow water to return to a boil Boil for 1-2 minutes Remove from heat and put the fillets in ice water Break out the cocktail sauce and get after it!
