Caught a few from Monticello the other day that were already poached! All I added was lemon & butter...
Seriously, here's what I like to do:
1-3 pounds - Blacken 3-6 pounds - Stir Fry 6-9 pounds - Lightly saute 9-12 pounds - Shake & Bake 12-15 pounds - Grill over hot coals 15-18 pounds - Boil until tender Over 18 pounds - Throw back, too tough!

BIG difference between burnt fish and blackened fish I like to fry them, bake them, grill them....anything but boil them! I'll leave that fish soup to the south louisiana people I remember as a kid going fishing on Toledo with my dad and catching some in the morning, pulling up on an island and frying them up for lunch. It truly doesn't get any better then that!

Very simple, very delicious: just salt, pepper, lightly flour, saute in olive oil. Or use Tony's instead of salt and pepper. Awesome.

I used to just eat catfish, but the tourny fishermen cut so many lines, it is not worth it so I jusy eat LMB or crappie now. Lots easier and just as good. I may try another round of catfishing,I just think it is fun. j49

well the OP is about as productive as a helicopter lure... savvy bass fisherman have had this one dangled in front of them one too many times... did manage to pull a few dinks though!

Throw filets on the George Foreman with a little bit of Tony's sprinkled on. LMB is one of my favorite fish to eat. Speaking of which, it's time to head to Amistad for a meat run.
