Beef jerky is a great idea.
+1 Dehydrated foods are the way to go. LEaves more weight for you to carry water you can actualy drink.
 It's more than the catfish would do.

I would try and get a hold of some MREs. They give you all the calories you need and some of them don't taste too bad. Definitley take a water filter with you. Flint is not a bad idea either just in case if something was to happen. A good knife is a must.

Check the water flow. You dont want to have to drag. Take frozen water bottles for suppliment to ice. Avoid the dry ice. Freezes everything. I take 1/2 water bottle olive oil,1/2 bottle fuel for coleman, frozen sausage, taters, onions,bell pepper, tortillas, eggs,12" non-stick pan, tobasco. We eat like kings and the look on the other guys face when they smell it compared to the freeze dried stuff is priceless. The battery powered fan is a must. 20 miles is a cakewalk, take the kid. A camera is a must also. Load your craft in your yard just like you are on the water then turn it over and figure out what would be lost or got wet and correct that beforehand. Bring some OTC pain meds, you will be sore from paddling, sunburn, beer, or all the above if you do it right. Have fun.

Take some inflatable dolls. Someone took one on a buddys bachelor party down the Brazos. I'd put a funny picture up but I'm afraid I'd get a little break from the TFF.

An extra paddle is important--you don't necessarily have to bring it, but ensure someone in the group has one. Short of that, bring duct tape to repair a broken paddle, otherwise you risk 'being up a creek without a paddle.' Been there, done that, and it sucked.
Also, if you don't normally work with your hands (i.e., you've got soft hands), then a cheap pair of paddling gloves pay for themselves. Unless you like blisters. Would highly recommend you tell the boy's father to bring some for his son. Fingerless biking gloves from Walmart cost less than $10 and work well.
Lastly, quick dry long pants and a long sleeve fishing shirt are a must IMHO. You can unzip the legs from the pants and roll up the sleeves whenever you want, but for an extra layer of protection from the sun, they are invaluable. Also, apply sunscreen liberally. Few things suck worse that getting sunburned the first day out and still having a day or two on the water to go. The back of my neck is usually the first thing to burn on my body. I now keep a rolled up, small wet hand towel around my neck which protects it from the sun and helps keep me cool.

I would recommend taking your choice of liquor and your choice of mixer, rather than beer. If you enjoy more than a few beers at a time your load will be heavy. On our trip I found that after an exhausting day of paddling, two jack and cokes gave me the perfect night cap for sleepy time.

I would recommend just bringing nuts, dried fruit, cliff bars, and maybe some beef jerky. Try to get the low salt stuff. Hope for a fish for dinner, but the rest is enough to survive on. Lots of water! If you don't like bugs, then a tent or something. You don't really need a lot for 2 nights. I doubt you will sleep in a sleeping bag, so maybe a thin roll up mat for comfort? Use a bag with clothes for a pillow, or even just your shirt. Don't forget sunscreen!
I recommend the magellen stuff from academy. I forgot my convertible shorts, but I would have loved to have something to cover my legs. I had my sleeves rolled down, a hat, and a buff. I would get it all wet, and it would keep me cool for quite a while.
Also, after paddling all day in the heat, I felt like I had a hangover(dehydration) and the last thing I wanted was booze. We brought some whiskey, but didn't drink much at all. It was all I could do to keep drinking water. If there wasn't a head wind and a little more current, I probably would have been in better spirits. It was a work out trying to stay on schedule.

my hat has a large enough rim on it to cover my neck. Im rather brown though so I dont get sunburned very bad.
