I like them deep fried and blackened, just use the batter and seasoning you like the best for other fish. I do vastly prefer them with the blood vein down the middle mostly removed before cooking, more work and time but worth it for me. Also eat them seared with lots of lime juice or baked (not big on baked but wife likes it that way)
Can someone explain how the Feds count recreational Red Snapper catch?

Copy that on removing the blood vein. Yeah buddy dropped off several bags of Striper and Hybred fillets from his trip on Twok. this week. Having a fish-fry with Channels, and thought I might as well do up the other as well. Thanks folks.

I made fish tacos this week with some sandbass the family loved it. Lightly coated with olive oil and and some Tony's seasoning cooked on a griddle (like you would cook pancakes on). Also used a little OldBay.

Dang, that looks good TEXASFIVEGUN.
Stripers make a great grilling fish because of their thickness and texture, IMO. Just put Lemon, butter, and fish seasonings on them and slap them on the grill...some of the best eating there is.

Great replies! Thanks guys. Those Stipers and Hybrids came out like the "Bomb"! Folks loved them. Had to slice those fillets horiz. to get them thinned out abit. fried them just like the C-Cats. Had a different taste. Wish I could post pics, But if you folks back East of me, catch a Western Breeze, I am sure you can smell the Goodness! Thanks again, everyone!!!! Bittercreek

Good tossed in cornmeal with, garlic powder, onion powder, cayenne pepper, crushed peppercorn, salt, mix a little bit of all purpose flour. Keep filet less than half an inch thick. deep fry golden, done when floating. OR........ Vietnamese style. much more complicated. Gut, make a slit down the backbone. stuff with a mixture of salt, scallions, shallots, garlic, fresh chili peppers, lemongrass and some bacon in the belly area. Wrap a couple times in aluminum foil. Grill until cooked, about 10-15 mins on each side for a 5 lbs fish. Remove foil, skin, bones and wrap chunks of the meat in spring roll wrap with Vermicelli noodles, Romaine lettuce, vertically sliced cucumbers and mint leaves. Dip in favorite sauce. My favorite!
