if I wanted to use live shrimp, how do I put them on the hook so that they will stay alive?

Good morning mc1...two schools of thought on this.
1. Through the "horn"...that very pointed part at the front of the head where it becomes part of the head itself, being careful not to go into the "dark-spot"...actually, you should be just in front of that spot.
2. Through the last segment of the tail.
I think it is accepted that fish will swallow the shrimp tail first for what my be obvious reasons.
Hook sizes range from #4 to #8 (3X)treble or #1 to 4/0 Carlisle.

not really so on tail first theory, being a tightwad , we when running low on shrimp we will break the shrimp in half. and believe it or not we get more fish and bites on the head portion ..
