East end of Galveston/San Luis-newbie to area questions

I booked a camp down on the east end of Galveston in the Sea Isle area for the middle of July.(wedding anniversary) I plan on bringing my boat to do a little fishing. (17 ft Proline Center console). Any local information anyone can share would be great, as Google images for that eastern area makes it appear to be nothing but a big sand flat. Any shallow water concerns or unmarked sandbars, or is it pretty much wide open/deep 5ft plus? Is the channel to the bridge decently marked, or is there a secret way to get to the bridge? Bay fishing? Is it the typical drifting technique, chase birds, etc?
Any deep holes or popular reefs on that end? I have read that exiting to the Gulf out of the pass is not recommended, but I am curious about fishing the San Luis bridge area. Any info for a newbie to the area would be appreciated.

Where do you live? Personally I'd rather fish out of Freeport. Water is better and it's a lot less crowded down there.

I live in Mckinney, North of Dallas. Place is already booked, so Freeport is not an option at this time, it's a wedding anniversary trip so the allowable fishing time/effort will be rather limited. I am just lucky she agreed to bring the boat.LOL We were just just looking to get away someplace close.
I normally fish LA, Grand Isle/Fourchon Area or Calcasieu Mostly, but she was not interested in that far a tow. (I am going to Grand Isle in September for a week)
Not looking to fill the boat with fish, just would like to fish a few spots, safely, maybe catch a few for dinner.

Freeport is not that far from Galveston, might be worth the drive to get away from the people.

Or just take the boat down there if it's calm enough. I don't know if there's any natural gas rigs close to Galveston but if you could find some that'd be where I'd go.
