Cover your fillet with Onion/Garlic seasoning, some slap ya mama,black pepper and a little cayenne pepper. Put about 2 Tbl spoons of butter in the pan and fry fairly hot for 4 minutes on each side. It sounds like too much on the seasoning but it is outstanding!!!

That fillet is from an 8# blue, if you had smaller/thinner fillets you might have adjust the cooking time.

that slab does look awesome.
we had a neighborhood block party tonight and I fried up a bunch of catfish. looks like its gonna be a week of leftovers!
