they burn the "stumps" of that stuff after cutting it down in florida, dont really know why That's what we do here in NC too.

it's grass (no apical growth buds to worry about)...cut as short as you like....however, i would just trim the dead stuff to leave some of the larger growth you already have....and remember to cut it next winter so you don't have to pick through the live stuff to get the dead out next year.
