Gonna buy another one for trolling motor. Will there be any issues with using two at the same time, such as interference, etc.?

Explain. Everthing that I've been told yes two HDS units can be plugged into one box but only one transducer. From the unit at the front you would be seeing the images from the transom mounted transducer. If you have a transducer at the trolling motor you have to unplug the transom one from the box and plug the trolling motor one in. Is this what you mean?
