I made this last night for dinner and it was fantastic.

Ingredients: Should make about 16 fillets.
1 - 12 oz can of your favorite beer
3/4 - cup of flour
3/4 - cup of corn meal (real corn meal, not jiffy)
1/2 - tsp salt
1 - tsp baking powder
1 - tsp of your favorite cajun spices (more for more spicy taste if you desire that)
1 - cup of flour in a large plastic bag.
1 - egg
2/3 - cut of milk.
Canola oil heated to 375 - 400 degrees in your fry pan. I use and electric fry pan as there is less chance of fire than a gas flame under the fry pan.

In a large bowl mix 3/4 cup of flour, 3/4 cup of corn meal, 1/2 tsp of salt, 1 tsp baking powder and 1 tsp of cajun spice. Make sure to mix throughly. Add 12 oz can of beer and mix until very smoothe. Let sit for at least an hour.

Then in a separate bowl beat the egg real good, then add the milk and beat real good.

Now dip a fillet into the milk and egg mix and put into plastic bag with the flour. You can put 2 or 3 fillets in the plastic bag and then shake until the the fillets are coated in flour. Shake off any extra.

Prior to frying make sure the canola oil is heated to 375 to 400 degrees. Take the fillets that are coated with the flour and dip into the batter. Put in to the hot oil and fry until a golden brown. The oil should be deep enough to let the fillets float. When one side is nice and brown turn over and get the other sitde nice and brown. Then remove from pry pan and drain on paper towels. Salt to your taste.

Serve with potato salad and cole slaw and your favorite wine.

Any leftovers will make a good fish and cheese sandwich.
