Here's a mullet recipe:
Take an 8 inch mullet. Put a #12 circle hook through his snout. Add 18 inches of steel leader and 4 -6 oz of lead. Catch a 25 inch redfish. Fillet the Red, leaving the scales on and grill him using my recipe below. Eat the Red Toss the mullet and the carcass back in the water.
Repeat.
Now, Donald...please pick John Bolton for your running mate.

I was in HEB over the christmas holdidays buying some shrimp. Anywho, while I was waiting in line I started looking through a guide book that HEB keeps on the counter for differnt fish recipes of different fish. To my suprise stripped mullet was indeed in that book as good table fare. So was carp and I am pretty sure I saw shad also. I am not positive about the shad but I recall being totally amazed of some other fish in the book and I am thinking it was shad.

The trick to good smoked mullet, is to get them early in the year, when they have plenty of fat (that fat mullet are the best and are best for smoking).
I have had success smoking and consuming Galveston area mullet. However, we set the split mullet in a dry brine of 50% kosher salt, and brown sugar. Then smoke it, or indirect cook off to the side in a grill with wet flavor chips wrapped in aluminum set near the coals. And we thought it was good.
I grew up in Tampa in the 70's, and you can find mullet shacks all over the place.. Little shacks on the street corners, or on side of the road, near the beach or Causeways that smoked and severed fresh smoked mullet.
I made the mistake a few years ago, or purchasing it from a grocery (Publics), that was a waste of money.
Ask around, it is difficult to beat 'fresh smoked mullet'.
When it gets too late in the season, or too hot the mullet don't have as much fat and are not as good.
You can also do a search you 'Youtube' for smoked mullet for a better idea.
