That is way too cool... Give him a few more years and a few more pounds and I'd eat that sucker in a second! Yum Yum delish... I have worn out half a dozen filet knives cleaning those things, they have one of the toughest skins I have ever seen!

Don't filet them. The skin is soft along the edges of the dorsal and anal fins. Make an incision along the fins and one cut across the skin behind the head to connect the incisions. The skin peels right off perfectly.

I'll be Darned... I've skinned countless fish but I don't know why I never thought of doin it on Triggers. I guess cause of their shape or something, it just never dawned on me. Thanks for heads up Pope!

Yea my father had a salwater tank full of sting rays, sharks, eels, triggers, et al. It was always fun to throw a few shrimp in there and watch the triggers go ape****.

He was released for another day. Some of his larger cousins were released onto the grill. Very good eating.
