Hey Rudy I guess you and I are similar in that regard. But did you know there is a seasoning call "slap yo mama"?
Fishbonz Not to butt in on your convo, but I bought some of that "slap yo mama" seasoning a few years ago when I was in the mall in New Orleans ( the one downtown by the river). Saw in one of the shops advertising cookbooks and cajun seasonings. I bought it as a joke. I messed around one day and ran out of my other seasoning so I decided to use my souvenir slap yo mama from New Orleans. Let's just say it's been on every since I opened it!!!!

Here's something totally different. After I wash and dry filets, I sprinkle on some Zatarains Blackened Seasoning. While I'm doing this I have my big cast iron skillet heating up on the stove as hot as I can get it. Then I spray just a hint of Pam to keep the filets from sticking and lay them on the skillet! Then heat up some tortillas and put a filet on the tortillia, add some lettuce, tomato, salsa and maybe guacamoli, fold and eat! Fish tacos! Love em and it's a fat free meal that makes the doc happy too. Try it, you'll like it.

that friled crappie w white wine is funny to me..lol. sorry man, but give me a tall glass of sweet tea, or a frosty bud light. save the wine for whatever it goes with. though llano is good wine if there is such a thing. my batter is simple though... never ever used a recipe, nor measured a single ingredient in it...just not that kind of cook i guess. yella cornmeal w a touch of flour, sea salt, course black pepper....now n then i will cajun it up a bit but mostly just straight homestyle salt n pepper meal. though lately ive toyed with beer batters, and actually nailed it once. (this does need to be measured out) so it can be reproduced cus now i cant remember how i nailed it..lmao. i dont think theres a better veggie dish for fried crappie than a fresh cucumber salad w tomatoes, red onion, vinegar, olive oil, water.... especially in summer.

slap yo mama seasoning is good stuff for sure... sprinkle a bit on right out the grease n see what that does for ya....

hey crappie_hook-- i prefer an ice cold Miller Genuine Draft Longneck if the Llano is not available! But i do enjoy a glass of wine, and Llano consitently produces top quality dry wines in both red and white! White does go with fish and chicken btw.

i know i hear ppl say that all the time..but clearly its an acquired taste... my pallet says it just doesnt go..lol. but u are right about llano... its the best ive had. and i support anything made here in tx... lonestar beer, lyle lovett and all that goes with it

LOl why soak crappie in beer? I soak deer meat in beer to draw out the blood and its tenderizes the meat. Makes no sence to me to soak great fish in beer.
White Cornmeal is the best for you guy that havent tried it.

all of this soundfs good but have any of you guys had smoked crappie, this is how i do it, i get it on the upper level of the barrel style smoker with pecan and mesquite wood soaked before hand for maximized smoking, and i place them on foil up there a little lemon and cilantro (FRESH) and then about fifteen to twenty minutes of smoking they're done, this is if you slow smoke them, if you have a real hot smoker say 400 450 degrees you're gonna do it about five minutes less as i smoke them when it hits the 300 to 325 mark its some good stuff.

10 minutes in Lousiana Hot Sauce "Wing Sauce". Breading.. 2 cups yellow corn meal, 1 cup flour, 3Tbls. Tony's. Fried up in Peanut Oil

Basically i get the feeling that there is NOT a wrong way to fix up some crappie, basically the best eating fish that swims!
Well, at least in this part of the world, LOL(I hear the walleye faithful rumbling in the distance, with the bluegill fanatics quickly stirring to action!)

id love to try some walleye.. i hear its better than crappie, if thats at all possible. havent eaten bluegill since i was a kid, but man i remember em being good fried whole w them tails good n crunchy... earliest memories of fishing right there man. m y grandpa frying up my bluegills and his crappie, both from the whiterock boat house. and eating em up fresh for lunch. or them big ol lake fork bluegills a lil later in childhood... good times bluewave... who said soaking em in beer? i said beer batter man...lol like long john silvers. who soaks crappie in beer? lol.....

where can we put this walleye question to rest...or where can i rather? i know theres a few places in town that serve it... cant be the same as fresh caught, or is it? i have to try the fish that rivals my crappies.....

My wife breads them in Japanese breadcrumbs instead of cornmeal. She buys it from the Asian grocery store and it's very light and crispy since it's made from rice.
