White cornmeal, or the cornmeal mix that comes with flour, baking soda or powder...plus some Lowry's and extra garlic powder...oh, lawdy lawdy!
Also really like to blacken catfish and plan on smoking some trout next week...it's gonna be a fishy time!

wash and shake in Andys seasoned cornmeal with a little Tapatio hot sauce. Damn ! I'm going to take out a bag of fillets

Lots of great recipes and seasonings out there If i use cornmeal i use the fine grind or grind it myself in a blender otherwise it has the texture of sand.

I dip my fillets in beer batter first, then put the fillets in a bag filled with dry batter, shake, then drop in the grease. I let mine cook about another minute or so after they float because I like my crust hard and crunchy.

How do yall prepare your crappie! I filet mine. Wash the meat. Roll in cornmeal and straight in to the hot oil. Cook em till they float to the surface. HEAVEN!!!! close. I add some salt and pepper to taste to the cornmeal first... then i do the same as you.. makes it simple as heck with a fry daddy!

Too much talk!!!!!!! I had to drag some filets out of the freezer and try some recipes. The mustard was very good but soaking in a quick splash of tobasco and then in the corn meal was my favorite. Simple aqnd quick. God that was good.

Coat with Creole Mustard. Bread with Louisiana Fish Fry in the BLUE bag. Fry. No other seasonings are needed. Resist the urge to slap yo' momma! Yes sir! Except for a few splashes of Tabasco, or Louisiana Hot Sauce! Now, the home brew is as follows: White/yellow cornmeal mix Season with onion powder, garlic powder, cayenne pepper, black pepper, salt, and a pinch of paprika.Dry coat the fillets, dip in milk, and coat again.

I guess that I am a purist but to me the taste of crappie is too good to mask with a bunch of seasoning, so I just use my old dad's method & mix 3 parts of corn meal with 1 part of flour, a little salt & pepper & dome good hot oil.
A bad day on the lake is much better than a good day at work!
