I am new to plastics and wanted to see if yall could help me out? With the water being cold I've been fishing plastics real slow but I am having trouble keeping contact with the bottom because of the wind. What size worm should I use on windy day? What weight should I use?
Any help would be great!

wind sucks but sometimes it turns on the fish. I would just go with a heavier weight maybe try a carolina rig.

Colder water usually means down-sizing your plastics. finese worms, tubes, craw-tubes, etc.
As for weight, let the wind-speed dictate. You might only need a 1/4 oz and you might need a 1/2 oz or heavier to stay in contact with the bottom on windy days.
