To catch gar, several posts (do a search) on this website say to use minnows with some unravelled nylon string around it. The gars get their teeth caught up in the string and can't get loose. I'm not sure if the paddlefish aren't protected. Better check. Of course, if you go with a guide, you'll learn all that, plus where and how.
