In my previous post titled "Creamy Ranch Pork chops" you can substitute the chicken for the pork chops and it makes a very good meal.

Not saying that its a fancy meal but around our house one of our favorite quick and easy meal is to get several chicken breast and dice into bite size pieces. Season with Angelos Pork and Chicken rub. Melt a small amount of butter into a skillet and cook the chicken on about a medium heat. Once it looks like its done go ahead and turn it on high heat. Keep it stirred and throw some more butter in till its kinda brown. Serve with rice and a veggie.

Dice it while still partially frozen, saute in olive oil and seasonings. Roll into warm flour tortillas with shredded cheese, guacamole, onion, pico de gallo.
Or dice it and saute it, and fold into a flour tortilla with cheese to make a quesadilla. Top with guac, etc.

Mexican Chicken
Season chicken breasts with Tony's, cumin, and chili powder. Prepare you favorite Pico Grill chicken When just about done top chiken with pico and then shredded cheese (do not skimp on the cheese). Once cheese is melted remove from grill. Serve with steamed brocoli w/ cheese and long grain wild rice.

Sounds like a good opportunity to make a stir fry. You can take the easy way out and get the vegetables already cut and ready to go in the frozen food section of the grocery store. Or pick and choose your own (carrots, broccoli, snap peas, mushrooms, bean sprouts, etc).. Cut chicken into 1" cubes and get busy.

Cook whole chicken breast in a pan with olive oil. Add salt, pepper, and rosemary. Fresh rosemary is the best along with Janes Mixed up Salt and fresh cracked pepper. Season both sides.
Very easy and delicious recipe.
