If your truck has a cabin air filter try replacing it, they can get clogged and cause it not to blow as hard.

Check the filter first- for airflow But 180 doesn't sound right. Should be around 205-210. Thermostat might be stuck open or it could be low on antifreeze. They will get a pocket of air at the sensor and not let the temp sending unit read the correct temp.
Sounds like 2 diff problems, air flow and temp

i topped off the anti freeze the other day. so it should be good. surely you dont have to burp one like you sometimes do with a new water pump just to add coolant!!!

If it gets air in the system it can become trapped but not for long. Most of the time it traps in the highest places like heater hoses. Check the level again it may have it burped. Did you have it fixed or it still losing coolant?

If it all checks out good- And you think it might be the T stat just cut a piece of cardboard 1/2 the size of your radiator and put it in front of it. This will raise the temp safely and you can use this to diagnose the Tstat

Sounds like 2 problems. 1st. problem..only running about 180 degrees, should run around 210. 10 year old vehicle..probably thermostat stuck open a little bit.Problem#2 Not blowing hard.. Hopefully the cabin air filter, could also be a partially stopped up heater core on the outside, from sucking dirt/debris from the floor board(using the recirculate or max a/c setting). I also have seen walmart sacks getting sucked into the recirc vent door and restricting the air flow. Probably not the blend door for the pressure problem it only regulates the door inbetween the hearter core and evap. core. It could be the problem for the not hot enough if your engine was running the correct temp.

I agree! I think you have two problems also. That truck came from the factory with a 195 stat! It should run around 200 degree's. I don't think they had an in cabin filter in 2000, probably debris on the evaporator! I retired from G.M. stores with almost 40 yrs. service! Hope that helps!
